I highly recommend Ai Kogyo slicers. I bought a set in Tokyo 18 years ago and they are still one of my most useful and coveted kitchen tools. I use them constantly to shred, julienne, slice, and grate raw veggies into all the interesting and aesthetically pleasing shapes you find in restaurant Japanese food. We eat a lot more raw veggies because in under a minute I can shred red cabbage, slice radishes paper thin, and micro julienne carrots to throw on top of whatever we're having. Super easy to clean, no parts to screw in or clean around. Safer and more precise than those giant, expensive steel mandolines. If you're vegetarian or into healthy cooking, these are a gift.
